September 1: The Blushing Pear

I loved the blush color on this pear--and did it ever taste as wonderful as it looks....

May 28: Ladies' Tea

Marianne and Alice at Spring Tea

The ladies of Alpine Anglican Church of the Blessed Trinity kindly invited me to join them for their annual Spring Tea at Cobblestone Cottage in Alpine. My favourites: the apricot tea and the scones. A lovely time was had by all.

Day 65: Dessert!!!!

Keith made me a late birthday dessert--completely from "scratch"--my favorite: Boston Cream Pie! Yummy!!!!

J enjoyed some of his "fun dip" Valentine candy...with rather colorful results.

Benjamin made himself a snack this afternoon, a favorite in our household: peanut butter on brown rice cakes....

Day 14: At Lunch Today

My lunch caught the light this afternoon, and the whispering sound the tangerines made as I separated them into sections drew my attention even more....

Day 5: All in One....

I was daring enough (or foolish enough, take your pick) to take all four kids (three teens and one "tween") clothes shopping. All day.

We stopped for lunch at nearly three at a Pizza Hut where J, our middle son (and newfound fashionista who spent his money on some great wardrobe basics) proceeded to stuff an entire slice of pizza into his mouth at once. I snapped photos and E took video while the Pizza Hut employees laughed their behinds off...they didn't believe he actually could do it.

We did.

At Taco Bell

While running errands after church today, we stopped by Taco Bell for lunch. The restaurant was very busy, so we waited a long time for our food. And Benjamin decided to make his own Taco Bell version of a "house of cards" while waiting....

Easter Morning Breakfast

Coloured eggs and lemon scones....

Day 73: Sunday Dessert

After making chocolate mousse for our Friday night dinner party, Keith used the leftover egg whites to make meringues on Sunday night. They take a very loooong time to bake at 150 degrees in the oven, but they're so wonderfully crispy and light! These are vanilla meringues, and he made lemon ones later on. Delectable ... and gluten-free!

Day 29: Chicken Stir Fry

Keith made a delicious dinner tonight -- Chicken Stir Fry with broccoli, celery, water chestnuts, almonds, bell peppers, mushrooms, in a wonderful sauce, all over brown rice. I'm so glad that my husband can cook so well.

Day 12: A Neat-Nick Boy?

J made himself an extremely well-organized lunch -- everything all lined up and ready to eat. I only wish his room were *that* neat!

Friday: Making Enchiladas

Keith prepares to make his famous enchiladas with his recipe from the Food Network. Deeeeeelicious! We must have fresh cilantro, too, of course....

Delectable Dinner

Keith's Chicken Parmigiana is, simply stated, a work of art. The recipe evolved from a veal parmigiana recipe at first, then Keith put his own twist (and a gluten-free one at that!) on my converted recipe, and the result is a melt-in-your-mouth chicken, sauce, cheese, and pasta dish that merits a glass of Riesling and a cloth napkin in your lap. Perfection on a plate.

Kids' Favorite Dinner

The kids loooove "snacky dinnners" in which we provide a variety of finger foods, in this case: ham and salami slices; cheddar and jack cheeses; three kinds of crackers; watermelon, cantaloup, and apple slices; baby carrots; olives, and various dips and peanut butter (for crackers, apples, and carrots). Sometimes we'll bake some frozen rolled tacos, mini-pizzas, or something similar. We don't do this dinner very often because it takes so long to prepare, but the kids ADORE it and were willing to help Keith prepare all the plates of food. The laughter and fun around the table almost makes all that chopping and slicing worth it.

Kitchen Helper

Keith almost always makes dinner. It's not easy after a long day at work, but he's a superb cook who makes us healthy and delectable meals. And he's great about getting the kids involved. B helps prepare filling for pollo asado burritos for tonight's dinner. Deeeeeelicious!

Saturday: Garden High Tea

On Saturday afternoon I attended a bridal tea in honor of one of the women at our church, Lisa. Maggie is our tea-diva, putting on incredibly complicated high teas. Lisa felt blessed and well-loved by all the effort, and we all very much enjoyed the lovely Garden Tea.

Ol' Fashioned Dinner

Tonight I made my great-grandmother's Tamale Pie for dinner, topped with Keith's mom's cornbread. It's one of Keith's least favorite meals, so I usually make it while he's out of town. With very little money available for groceries this week, when I found that I had almost all the ingredients already on hand, we decided to make it, even if Keith had to scrounge something up for himself.

The kids and I love it -- it's one of our favorites and fairly easy to make.

Catching Up: Monday

Keith made us a lovely pepper beef dish with brown rice. Here J attempts chopsticks, a gift from one of Keith's online friends from Japan.
