Keith made Denver-style omelettes tonight for dinner. The omelettes were so huge that we had to get out our old plates. Ham, cheddar, peppers, onions, celery, and mushrooms ... yum!
Omigosh, I want one NOW! I love omelettes. Used to make them once a week or so years ago, but now it takes seemingly forever ~ not to mention mass quantities of eggs ~ to make enough for the whole family. Hope you all enjoyed them!

Oh, YUM! I love omelettes, but never make them for myself.
Oh man, does that look good. I'd thought of making Spanish omelettes tomorrow and this settles it!
